Participants of "Farmer's School" of RSHB get practical experience at the largest enterprises of Mari El

The trainees of the "Farmer's School" of Rosselkhozbank in Mari El continue practical classes at the largest enterprises of the region. This time the partners of the project were LLC Semenovsky Breeding Farm, LLC Sernursky Cheese Plant, as well as LLC Malakhovsky Beer.

Thus, the students of the Milk Production and Cheese Making direction visited the dairy shop of the Semenovsky Breeding Farm CJSC. The agricultural enterprise is one of the largest milk producers in Mari El. Alfira Matveeva, chief technologist of the company, and Olga Elkina, head of the laboratory, organized a tour of the production and talked about the features of the technological process of production of drinking milk and dairy products for the students of the project. "Everything is made from one hundred percent milk, this is the highest grade milk, - said the chief technologist. - To improve the quality of milk, we use only our own feed".

Listeners were interested in all aspects of production - from the choice of starters and flavor additives to the peculiarities of packaging. During the tasting of dairy products novice farmers appreciated the high quality of both traditional and unique dairy products, which can be found on the shelves not only in Mari El, but also in neighboring regions.

Students of this direction also visited another dynamically developing enterprise in the region - the cheese plant CJSC "Sernursky cheese plant". The session with the students was conducted by the director of the enterprise Sergey Chernykh. After telling about the history and prospects of development of the enterprise, he invited the participants to get acquainted with the technology of making whole-milk products, baby food and cheese, as well as described in detail the logistics of the enterprise. In addition, the students visited the laboratory for assessing the quality of milk and dairy products. Sergey Chernykh explained in more detail the peculiarities of baby food production using innovative ultrafiltration equipment, CIP-wash, conducted a tour of the shops where the unique Italian cheeses are made, showed the cameras where cheeses are ripened.

"The assortment of the plant has more than 150 items, - said the director of the enterprise. - For the last year we have reached a new level - we mastered the Swiss technology of cheese production, opened and launched the shop for the production of Sernur confectionery and cosmetics. We are planning to increase the volume of production, while maintaining the quality of our products".

Not less interesting practical lesson took place in the laboratory of the Mari State University for students of the direction "Technology of production and processing of fruit and vegetable, berry products". Students studied the peculiarities of apple cider and craft beer production. Natalya Elchaninova, Director of LLC "Malakhovskoe Beer", introduced the novice farmers with the technology of private brewing. The enterprise is focused on production of unsterilized and unfiltered beer from different raw materials. Listeners were also interested in the process of making fruit and berry wines and how to determine their quality and were able to try themselves as brewers.

"To gain experience from people who care about their production, their team - it's invaluable, - Vladislav Nikolaev, a student of the project, shares his opinion. - We are grateful to "Farmer's School" for the opportunity to learn from professionals in their field.

During the laboratory classes, students of apiculture and bee processing learned to identify the organoleptic and physical-chemical properties of bee products (bee venom, propolis, royal jelly, bee pollen and honey), which allows them to master the methods for determining the quality and naturalness of these products. Currently, biologically active bee products (royal jelly, pollen, bee pollen, propolis, homogenate drones larvae, bee venom) are widely used throughout the world in medicine, cosmetology, food industry, children's and dietary nutrition. But in Russia honey is almost the only commercial product of beekeeping, and biologically active products are produced in very small quantities. Participants of Farmer's School project learnt about how unscrupulous sellers counterfeit bee products and practiced their skills of detecting falsified products. Apitherapy classes raised questions of apiprophylaxis, pharmacological and biological properties of bee products. During the class the students learned how to make propolis solutions, tinctures and ointments at home.

Synopsis. "The Farmer School is a federal educational project of Rosselkhozbank on the basis of the leading agricultural universities and agricultural enterprises. It combines the capabilities of the Ministry of Agriculture, regional authorities, universities, large businesses and farmers and provides theoretical and practical training of professional staff for the agricultural industry.

The project has already covered 50 regions. In the Republic of Mari El the Farmer's School training is held at the Agrarian and Technological Institute of Mari State University (Mari State University).
